This rice is identified as Sushi rice because the variety has been recognized as among those ideal for the preparation of this dish. It is originally a round rice of the japonica type, its grains are rather small and rounded, and have a certain stickiness which facilitates preparations such as cake mixes and, indeed, boiled rice, seasoned with rice vinegar, sugar, salt, and then cooled, to accompany raw fish or vegetables in Sushi.
