Wel-Pac Premium ITO Genkai Wakme, dried seaweed. Wakame seaweed has a slightly sweet seafood flavour. Setang wakame is widely used in Asian cuisine, particularly Japanese and Korean cuisine, and is a source of umami and spicy flavor. Wakame is very rich in fiber and is used in many Japanese dishes for soups, salads, meat dishes and vegetables.

Cut desired amount of wakame to use and soak in cold water for 4 to 6 minutes, or until desired rehydrated tenderness is achieved. Drain well. Add to soups and salads to taste.

Miso Soup with Wel Pac Premium ITO Wakame
1 bag dashi-no-moto (soup broth base)
3 tablespoons red miso
1/4 pound firm tofu, drained and cut into cubes
1/4 ounce Wel Pac Wakame, cut to 1/2 inch long, about 1/3 cup and rehydrated as directed above
2 tablespoons chopped fresh chives or 1 tablespoon freeze-dried chives

1. Bring 4 cups of water to a boil in a medium saucepan. Add unopenable bag of dashi-no-moto or soup stock base.
2. Bring back to the boil, then reduce the heat. Cover and simmer for 10 minutes.
3. Remove the dash-no-moto bag when used in place of the soup base. Add the red miso to the dash broth and stir until the miso dissolves completely.
4. Add the tofu, wakame and chives.
5. Heat well. Serve hot. For 3 or 4 portions.
