Dashi is an extremely important ingredient in Japanese cuisine, as it is what provides the flavor base for the vast majority of traditional Japanese dishes. Proper homemade dashi is made by infusing bonito fish flakes, kombu kelp, and/or other umami-rich ingredients in water. Nowadays, many Japanese prefer the convenience of powdered dashi. Instructions and observations
• Miso soup: 1 sachet of dashi, 4-5 cups of water and 4 tablespoons of miso paste for 4-5 servings.
• Noodle soup: 2 packets of dashi, 5 cups of water and soy sauce for 3 servings.
